Dairy-Free Starbucks Egg Bites

Starbucks has nothing on this Dairy-Free Starbucks Egg Bites recipe!

Everyone hypes up Starbucks's egg bites, so I have to admit, I felt a little left out because of my allergies. But these dairy-free egg bites are so delicious and way cheaper!

What are Egg Bites?

They are like mini crustless quiches. They’re super simple to make and easy to bring on the go. My favorite combination is diced ham and dairy-free cheddar cheese, but here are a few more ideas:

  • Spinach, mushroom, and dairy-free mozzarella

  • Spinach and dairy-free feta cheese

  • Bacon, dairy-free cheddar cheese, and fresh chives

And fresh herbs like chives, scallions, and dill are always a great addition.

A Starbucks Egg Bites Recipe Copycat

As much as I would love to try the Starbucks version, they, unfortunately, contain dairy. But these dairy-free egg bites taste just as good, if not better, as the Starbucks version. And your homemade version will taste fresher and be more affordable. The Starbucks versions are:

  • egg whites & roasted red pepper

  • bacon & Gruyère cheese

  • kale & mushroom

But I prefer to create my own spin on them with diced ham and dairy-free cheddar cheese. This recipe is very versatile, so you can use any fillings you like.

Can I Use Only Egg Whites?

Yes, you can use egg white instead of whole eggs. Follow the recipe below, but instead of adding 7 whole eggs, add 16oz of egg whites. You can also use the egg whites from 12 eggs, and save the yolks for another recipe.

Can I Make Them Egg-Free?

Yes, you can also make this recipe egg-free! I know it sounds crazy, but you can use an egg substitute like Just Egg. It is made from mung beans and is a great allergy-friendly option. It also tastes very similar to chicken eggs. Simply follow the recipe directions below, but instead of cracking and whisking chicken eggs, shake the Just Egg bottle. And one 12oz bottle of Just Eggs is the perfect amount of replacement for 7 chicken eggs.’

How Do I Store Them?

It depends on how quickly you plan to finish the recipe. The dairy-free egg bites will keep well in the fridge for up to a week if stored in an airtight container. But, you can freeze them for 2 to 3 months. To freeze them, cook the recipe and let it cool completely. Transfer them to a freezer-safe container and store them in the freezer.

How Do I Reheat the Them?

Although you can eat the recipe cold, I prefer them warm. If stored in the fridge, you can reheat them for 30 seconds in the microwave. However, they can become rubbery in the microwave. So I prefer to heat them up in the oven for 350F for about 5 minutes. Or you can heat them in the toaster oven for about 2 minutes. The oven and toaster oven make the top crispy and the dairy-free cheese melty.

Why Are My Egg Bites Rubbery?

If overcooked, the recipe will become rubbery, so only bake 15 - 18 muffins or until just cooked through. When done, they will also look slightly puffy. Also, reheating them in the oven or toaster oven instead of the microwave makes them less rubbery.

What’s in These Dairy-Free Egg Bites

  • Eggs: In my ideal world, I would buy local eggs from the farmer’s market each week, but it’s just not realistic with my busy schedule. So, I often opt for free-range eggs. Or see above for an egg-free option.

  • Non-dairy milk: There are many dairy-free kinds of milk on the market, but my favorites are almond and soy. A plain, unsweetened version works best in this recipe. So my favorite is the unsweetened plain Malk Organics almond milk as it is free of gums, fillers, oils, GMOs, and gluten.

  • Nutritional yeast: It may sound weird, but it’s just a deactivated yeast. It has a delicious, savory cheesy flavor.

  • & your favorite mix-ins!
