What Is Sunflower Seed Butter?

Sunflower seed butter is ground sunflower seeds, a great alternative to nut butter or peanut butter. It has a thick, smooth texture and earthy, roasted flavor. My favorite brand is SunButter. The “No Sugar Added” variety works best for this recipe, but I love the chocolate sunflower seed butter on toast. Wait, How Are the Cookies Egg-Free?

Eggs add structure to cookies, giving them the perfect chewy texture. However, you can make cookies without eggs by making a flax egg. You can make a flax egg by mixing 1 tablespoon of ground flax seeds (it must be ground, not whole) with 3 tablespoons of water. Let the mixture sit for 5 to 10 minutes to gel. And when the flax egg is mixed with the rest of the cookie ingredients, it makes perfect cookies with chewy centers and crisp edges.

Can I use Maple Syrup Instead of Honey?

Honey and sunflower seed butter is one of my favorite food combinations (It tastes amazing on toast)! So, in a cookie with marshmallows and chocolate chips is a true dream. But yes, you can use maple syrup instead. And the cookies will still have a great flavor profile.

Ingredients

  • 3 tbs water

  • 1 tbs ground flax

  • 1 1/3 cups tigernut flour

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/8 tsp salt

  • 1/2 cup sunflower seed butter

  • 1/3 cup apple sauce

  • 1/3 cup honey

  • 1 tsp vanilla extract

  • 1/3 cup dairy-free chocolate chips

  • 1/3 cup mini marshmallows

Directions

  • In a small bowl, add the ground flaxseed and water. Mix them together and set it aside to form a flax egg. 

  • In a medium bowl, add the tiger nut flour, baking soda, baking powder, and salt. Whisk until all combined.

  • In another bowl, add the sunflower seed butter, applesauce, honey, vanilla extract, and flax egg. Mix well. 

  • Add the dry ingredients to the wet ingredients and combine. Fold the dairy free chocolate chips, and marshmallows. Then, place the dough in the refrigerator to chill for 20 minutes. 

  • Preheat the oven to 350F and line two cookie sheets while the dough is chilling

  • Roll the dough into balls and place them on a cookie sheet. Bake for 10 to 12 minutes or until lightly golden brown. Enjoy warm with a glass of dairy-free milk.
